My husband, Gary, loves tacos. He asks for them every week or two, so I’m always looking for new ways to change things up.

The traditional meat, cheese, lettuce, salsa staple can get pretty boring. Luckily there are endless options available to satisfy a taco craving. Beef, pork, turkey, chicken, fish or bean from vegetarian to paleo, tacos can work with any budget or meal plan.

Making Spiced Shrimp Tacos

To me tacos always feel like an indulgence, but in reality they can make a healthy low-carb high-protein meal. And they come together quickly, so they’re convenient any time of day, even for breakfast.

This Weight Watcher recipe uses shrimp, so the tacos are low in fat and calories yet still zesty and full of flavor.

If you’re looking for an interesting new twist, try adding a thin swipe of Boursin herb cheese spread to half the tortilla before adding the shrimp. Yum!

  • Substitute your favorite taco/southwest seasoning blend for the cumin, paprika, salt, pepper and cayenne.
  • Use red salsa or fruity mango salsa if you prefer.
  • Use corn tortillas, or hard shells, in place of flour tortillas.
  • To keep it Paleo or Keto, enjoy the shrimp rolled in lettuce leaves.
  • Spread 1/2 teaspoons of Boursin herb cheese on the tortilla for a new taco twist.

Ingredients for making spiced shrimp tacos

  • Enjoy with spicy black beans and/or rice or low carb cauliflower rice.
  • Serve alongside a fresh corn salad.
  • Plate as a salad to save on carbs. Top with a few crushed tortilla chips.
  • Replace tortillas with half of a baked sweet potato.
  • Sprinkle on a little feta or cotija cheese. (Cotija is a hard, crumbly Mexican cheese made from cow’s milk. It resembles feta with it’s fresh salty flavor.)

Ways to Use Shrimp Taco Leftovers

  • Make it a soup. Add broth and mix in all the leftover shrimp, along with shredded/chopped cabbage, and salsa.
  • Make mini shrimp & cheese quesadillas with the leftover tortillas.
  • Sauté leftovers with cooked rice and beaten egg to make a version of Mexican fried rice. Keep it low carb by using riced cauliflower.
  • Use shrimp and a little feta and spinach to make a tasty omelet.

Spice-Rubbed Shrimp Soft Tacos

Shrimp make a light yet satisfying meal. By using packaged salad or slaw mix and jarred salsa this effortless meal comes together in under 20 minutes.

  • 1-1/2 pounds medium shrimp, peeled and deveined
  • 1/2 lime, juiced
  • 2 tablespoons fresh cilantro, chopped
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper (optional)
  • 2 teaspoons canola oil
  • 8 (6-inch) low carb flour tortillas
  • 2 cups baby arugula or packaged cole slaw mix (shredded cabbage/carrots)
  • 1/2 cup roma tomatoes, diced
  • 8 tablespoons jarred salsa verde
  • 1/2 jalapeño, seeded and minced (optional)
  • 4 teaspoons Boursin herb cheese spread (optional)
  1. Pat shrimp dry and place in a bowl. Add fresh lime juice and toss.

  2. Combine cumin, paprika, salt, pepper and cayenne, if using, in a small bowl. Whisk to combine.

  3. Sprinkle spices on shrimp and mix to gently coat.

  4. Add oil to skillet and heat over medium high heat.

  5. Add shrimp to skillet and cook 5-7 minutes until done, turn one time half way through.

  6. Warm tortillas according to package.

  7. Top tortillas with 1 tablespoon cheese spread (if using), shrimp, arugula or slaw, tomato, salsa, cilantro, and jalapeño (if using).
